Sucrose is commonly referred to as sugar, also known as table sugar. Sucrose is a disaccharide composed of one molecule of glucose and one molecule of fructose, obtained primarily from sugarcane or sugar beets. Sugar syrup undergoes a final mechanical purification process (via centrifugation).
Brown sugar does not undergo this process.
Sugar can be classified by its source (sugarcane, sugar beet), but also by its degree of refinement. The degree of refinement is usually indicated visually by color (piloncillo, panela, white), which is primarily determined by the percentage of sucrose that has been extracted.
